What can I do too do things like field agents (spies) (jack bauer, james bond)?

Trying for special forces in one of the services would probably be a good start, then you might be able to get involved with CIA or NSA later on as an undercover agent of some sort. There are probably a whole ton more of options but I couldn't list all of them (cause I don't know).
